Are you kind of freaking the hell out because tomorrow is the Superbowl and you’re doing this meal plan? You’re thinking- OMG my favorite day of the year. ALL the FOOD I am going to be missing out on?! Well, you know your girl has your back. Because it’s my day too and I refuse to have a mindset that this amazing program is taking anything from me. It’s all about just figuring out how to make it work. So I am going to share with you my menu for tomorrow. This is for Plan C. So obviously you will need to tweak it toward the plan you are in. I will break everything down so you know exactly how this will work out for you when it comes to servings, etc. I will be using an air fryer for a lot of this. You can do this in your oven using broil also.
MEAL ONE: This one is super easy. It’s breakfast. I will be eating two eggs over easy, a spinach and tomato scramble on the side, and a piece of whole grain toast with a tsp of peanut butter. My drink will be coffee and water with lemon.
MEAL TWO: Since the game hasn’t started yet, life is still normal at this point. My go-to recipe here is a red container of Grilled Chicken seasoned with Mrs. Dash Table Blend, Pepper, & Garlic Powder (cooked on my Opti Grill), a green container of cucumbers and tomato, a yellow container of whole grain pasta (served cold), tossed with a tsp of olive oil and white wine vinegar. Super simple and easy, extremely delicious.
MEAL THREE: My red & blue container will be buffalo chicken dip. I have to tweak my normal recipe to make it approved in the meal plan. Here is how I am doing so.
In a mini crockpot- one pound of all natural grilled chicken precooked and shredded, 1 cup of plain greek yogurt, 1 tsp of lemon juice, 1/3 cup of Frank’s Hot Sauce, 1 tablespoons of green onion, 1/2 cup shredded mozzarella, 1/4 cup blue cheese crumbles, 1 tsp cayenne pepper. Let cook on low for 20-30 minutes. Serving size- ONE RED CONTAINER.
I will be using celery sticks in my green container for dipping.
For the chips and salsa, I will be making my own chips in our air fryer. Take TWO corn tortillas (one yellow) and use 1 tsp EVOO to coat both sides. Season if desired. Preheat the Air Fryer to 350, slice the tortillas into quarters and fry for 6-8 minutes until crisp.
Purple container will store bought organic salsa.
MEAL FOUR: 6 All-Natural Chicken wings (1 Red) in the air fryer. If you haven’t gotten the point yet, air dryer is the best thing ever. Toss the chicken wings in a bowl with 1/4 cup Frank’s hot sauce. Season with sea salt, pepper, cayenne, garlic powder. Preheat air fryer to 360 degrees. Air fry for 20 minutes, tossing every 5-6 minutes. Remove the wings & toss with additional Frank’s hot sauce if desired.
Zucchini Fries (I will be counting as 1 green): Cut zucchini into spears and let stand at room temperature for 10 minutes. Preheat air fryer to 390°F. Place in a large bowl, drizzle with 1/2 tsp olive oil, toss with 1/4 tsp of each oregano, basil & cayenne pepper. Cook 10 minutes (toss halfway through). Fill one green container.
Sweet Potato Fries (1 Yellow) will be cooked the same as the zucchini fries. Slice into spears, toss with 1/2 tsp olive oil and Mrs. Dash seasonings. Air fry for 6-8 minutes at 360. Toss halfway through.
Cinnamon Apples will be my purple. Cut up an apple, toss with cinnamon, heat in microwave for 30-60 seconds. Measure in purple container, enjoy.
MEAL FIVE: My favorite meal of the day. My Shakeology. I blend mine with 1/2 of a banana, tsp of peanut butter, splash almond milk, ice, water & spinach.
